Soft Kohlrabi Sticks with Mild Herb Quark: A Tasty Toddler Snack
This fresh and colorful snack is wonderfully suited for little hands and is easy to grasp. The softly steamed kohlrabi sticks with creamy herb quark offer a great way to introduce your child to different textures and delicate flavors. It is a delightful dish for the shared family table, bringing wonderful variety to your weekly menu.
Right around the first birthday, many children find great joy in eating exactly what the grown-ups have on their plates. Shared meals strengthen the feeling of togetherness and motivate your child to try new things. This snack acts as a wonderful bridge between early finger foods and full family meals.
Ingredients
- 1 medium kohlrabi (approx. 250 g), organic if possible
- 100 g quark (full fat) or whole milk ricotta
- 2 tbsp plain yogurt (whole milk)
- 1 tsp canola oil
- 1 tbsp fresh, mild herbs (such as parsley or chives), finely chopped
- A small pinch of mild sweet paprika
(Makes about 2 to 3 toddler portions)
Preparation
- Peel the kohlrabi thoroughly and remove any woody parts, as they can be hard to chew. Cut the vegetable into finger-thick sticks that are easy to hold.
- Place the kohlrabi sticks in a small pot with a little water or use a steamer basket. Let the vegetables steam gently over medium heat for about 10 to 12 minutes.
- Check with a fork to see if the sticks are soft enough but not falling apart. Drain the remaining water and let the kohlrabi cool on a flat plate.
- Meanwhile, mix the quark, plain yogurt, and canola oil in a small bowl until you get a smooth, creamy texture. Gently fold in the finely chopped herbs and paprika.
- Always test the temperature of the kohlrabi sticks on your wrist before serving so your child does not burn their mouth. Arrange the cooled sticks together with the herb quark nicely on a plate.
Variations and Tips
- Vegetable variations: Instead of kohlrabi, steamed carrots, zucchini, broccoli florets, or sweet potatoes work wonderfully for this recipe. This allows you to reinvent the snack over and over again.
- Storage: The mixed quark can be kept covered in the refrigerator for up to two days. The steamed sticks can also be stored in the fridge. Freezing kohlrabi is not recommended due to its high water content, as it tends to become mushy.
- For the whole family: Simply season the portions for adults and older siblings with a little salt, cracked pepper, and a pinch of garlic powder.
- Adjusting texture: For children who are still practicing, or on days when teething is bothersome, you can mash the steamed kohlrabi with a fork and mix it directly into the quark as a fine puree.
Allergy and Safety Notes
This recipe contains dairy products like quark and yogurt, which are common allergens. Always introduce new ingredients one at a time and in small amounts to carefully observe any potential reactions. Even though honey is allowed after the first birthday, this recipe intentionally omits it to highlight the savory natural flavor of the vegetables.
Ensure that small or hard foods are always cooked soft or chopped for toddlers to prevent choking. Nuts and seeds are only suitable at this age when finely ground or served as a smooth butter. If you have any uncertainties about introducing complementary foods, allergies, or general nutrition, it is best to speak with your pediatrician.
Nutritional Information
Kohlrabi is rich in vitamin C, which wonderfully supports the child's immune system and helps the body better absorb plant-based iron. The quark provides high-quality protein and important calcium for growing bones and teeth. The added canola oil helps the body absorb the fat-soluble vitamins from the vegetables much more efficiently. This creates a beautifully balanced snack for in-between meals or a light side dish for dinner.
