Soft Mini Gingerbread with Orange Juice for Children

The holiday season brings many sweet scents into the kitchen. These soft mini gingerbread cookies with orange juice are a wonderful way to let your child share in the festive flavors. The recipe is specially tailored for children around three years and older, as the juice makes the dough wonderfully moist and easy to chew. Eating these small cookies together also supports fine motor skills and is simply fun.

Ingredients

For about two to three portions (one small baking sheet), you will need the following ingredients:

  • 100 g spelt flour
  • 50 g ground almonds (blanched)
  • 1 tsp mild gingerbread spice (without sharp notes like heavy cloves)
  • 1 tsp baking powder
  • 50 ml freshly squeezed orange juice
  • 30 g unsweetened applesauce
  • 2 tbsp maple syrup or agave nectar
  • 2 tbsp neutral canola oil

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the spelt flour, ground almonds, baking powder, and gingerbread spice thoroughly.
  3. In a second bowl, whisk together the orange juice, applesauce, maple syrup, and canola oil.
  4. Add the wet ingredients to the dry ingredients and stir with a spoon until a soft, smooth dough forms.
  5. Using slightly damp hands, shape the dough into small, flat cookies and place them on the baking sheet with some space in between.
  6. Bake in the oven for 12 to 15 minutes until the edges are lightly golden.
  7. Let the gingerbread cool completely and always check the temperature before serving.

Variations & Tips

You can easily replace the applesauce with pear puree to get a slightly different flavor profile. Stored in an airtight container in the fridge, the cookies will stay soft for about three days. They also freeze exceptionally well. Simply thaw the desired amount at room temperature. For the adult family members, you can dip half of the baked cookies in melted dark chocolate.

This recipe contains gluten from the spelt flour and tree nuts from the almonds. Please always introduce new ingredients one at a time and in small amounts to carefully observe any possible reactions. Use only finely ground nuts for young children, as whole nuts or coarse pieces pose a choking hazard.
