Ingredients

  • 100 g spelt flour
  • 50 g Hokkaido pumpkin (finely grated)
  • 50 g unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 teaspoon baking powder
  • 50 ml water or infant formula

Preparation

  1. Preheat the oven to 180 degrees Celsius.
  2. Wash the pumpkin, remove the seeds, and grate it very finely.
  3. Mix the spelt flour and baking powder in a bowl.
  4. Stir in the applesauce, canola oil, water, and grated pumpkin until a smooth batter forms.
  5. Pour the batter into small muffin tins and bake for about 15 minutes.
  6. Let the muffins cool completely and check the inside temperature before feeding your child.

Variations and Tips

  • You can easily replace the pumpkin with finely grated carrots or zucchini.
  • The muffins will keep in an airtight container in the fridge for about two days.
  • They freeze exceptionally well and can be thawed individually as needed.
