Soft Quark Dumplings with Unsweetened Apple Compote

Introduction

This sweet main dish is inspired by classic recipes but is made entirely without added sugar. The dumplings, made from a simple quark dough, are extremely soft and easy for toddlers to chew. It is a wonderful meal for the family table that everyone can enjoy while providing essential nutrients for your child. Sharing meals strengthens family bonds and makes discovering new textures a lovely experience.

Ingredients

For the dumplings (approx. 2 to 3 portions):

  • 250 g low fat quark
  • 1 egg
  • 100 g spelt flour
  • 20 g semolina
  • 1 pinch of salt

For the apple compote:

  • 3 apples (organic quality recommended)
  • 50 ml water
  • 1 pinch of cinnamon

Preparation

  1. Peel, core, and dice the apples into small pieces.
  2. Bring the diced apples, water, and cinnamon to a boil in a small pot and let simmer for about 10 minutes until soft.
  3. Mash the compote to your desired consistency or leave it chunky for older toddlers.
  4. For the dough, knead the quark, egg, flour, semolina, and salt in a bowl until a smooth, creamy mixture forms.
  5. Shape the dough into small, finger thick rolls on a floured surface.
  6. Bring water to a boil in a large pot, then reduce the heat until the water is only gently simmering.
  7. Drop the dumplings into the water and let them steep for about 5 minutes until they float to the surface.
  8. Lift the finished dumplings out with a slotted spoon, let them cool, and always check the temperature before feeding.

Variations and Tips

Pear compote or plum compote makes a wonderful alternative to apple compote. You can also drizzle a little unsweetened almond butter over the finished dumplings for extra flavor.

The cooked dumplings keep in the fridge for about two days. They also freeze exceptionally well. It is best to portion them into small containers so you have a quick meal ready on busy days.

For parents, you can pan fry the cooked dumplings in a little butter until golden brown. This adds wonderful roasted flavors while your child enjoys the soft, boiled version.
