Soft Sugar-Free Spelt Milk Rolls for Babies

Introduction

These soft spelt milk rolls make a wonderful snack for little explorers. They are easy for tiny hands to grasp, soften gently in the mouth, and are very kind to toothless gums. Thanks to the fine spelt flour, they also provide valuable energy for an exciting day.

Ingredients

  • 250 g light spelt flour (preferably organic)
  • 120 ml whole milk (3.5% fat)
  • 30 g soft unsalted butter
  • 21 g fresh yeast (half a cube) or 1 sachet active dry yeast
  • 1 tbsp unsweetened applesauce (for moisture and mild sweetness)

Preparation

  1. Gently warm the whole milk in a small saucepan until lukewarm. Make sure it does not get too hot, as high temperatures can deactivate the yeast.
  2. Dissolve the yeast in the lukewarm milk and stir in the applesauce.
  3. Place the spelt flour and soft butter in a bowl, pour in the yeast mixture, and knead everything into a smooth dough.
  4. Cover the dough and let it rest in a warm place for about 45 minutes until it has visibly doubled in size.
  5. Shape the dough into small, hand-sized rolls and place them on a baking tray lined with parchment paper.
  6. Bake the rolls in a preheated oven at 180 degrees Celsius (standard top and bottom heat) for about 15 minutes until golden brown.
  7. Allow the rolls to cool completely before serving. Always check the temperature inside before offering a piece to your child.

Variations & Tips

  • Fruity Twist: Mix some finely grated carrot or very smoothly pureed banana into the dough.
  • Storage: The rolls stay fresh for about two days when stored in an airtight container in the fridge.
  • Freezing: They freeze wonderfully and can be thawed individually as needed.
  • Texture Adjustment: For very young babies, you can soften a small piece of the roll in breast milk or formula before feeding.
  • For the Family: Parents can enjoy their own rolls fresh out of the oven spread with savory cheese or sugar-free jam.

This recipe contains wheat (spelt) and milk (common allergens). Always introduce new ingredients one at a time and in small amounts to easily monitor for any reactions. Cow's milk is fine as an ingredient in baking and cooking during the first year, but it is not suitable as a main drink until after the first birthday.
