
Soothing Rice Pudding with Warm Peach Compote
Especially in the first few weeks of pregnancy, your appetite can be quite unpredictable. A warm, mild rice pudding is gentle on the stomach and provides comforting energy. The fruity peach compote adds a pleasant freshness without being heavy.
Ingredients for 2 to 3 portions
- 150 g short-grain rice (pudding rice)
- 600 ml pasteurized milk (or a plant-based alternative)
- 1 pinch of salt
- 1 tsp vanilla extract or vanilla sugar
- 3 ripe peaches (or unsweetened canned peaches)
- 1 tsp butter or mild vegetable oil
Preparation
- Slowly bring the milk to a boil in a saucepan along with a pinch of salt and the vanilla.
- Stir in the rice, reduce the heat, and let it simmer gently with the lid on for about 30 minutes.
- Stir occasionally so the rice does not stick to the bottom of the pot.
- Meanwhile, wash and pit the peaches, then cut them into small cubes.
- Simmer the peach cubes in a small pot with a splash of water and the butter for five minutes until soft.
- Divide the finished rice pudding into bowls and top with the warm compote.
Good to know
The rice pudding keeps beautifully in the fridge for two to three days. Served cold, it is often easier to eat on days when nausea is strong. You can also easily vary the compote by using apples or pears.
When things feel difficult
If you are dealing with strong morning sickness, try eating the rice pudding plain and cooled down in small bites. Simply skip the compote if fruity acidity does not appeal to you right now.
