Soothing Vegetable Broth with Alphabet Noodles and Carrots

During the first weeks of pregnancy, your appetite can often be quite unpredictable. A mild, warm broth provides hydration without overloading your stomach. The alphabet noodles and carrots turn this soup into a light, comforting meal.

Ingredients for 2 to 3 portions

  • 4 cups (approx. 1 liter) mild vegetable broth
  • 2 medium carrots
  • 3 ounces (approx. 80 g) alphabet noodles (or other small soup pasta)
  • A few sprigs of fresh parsley (optional)
  • A pinch of salt to taste

Preparation

  1. Peel the carrots and cut them into fine cubes or thin slices.
  2. Bring the vegetable broth to a boil in a medium pot.
  3. Add the carrot pieces and let them simmer over medium heat for about five minutes.
  4. Stir in the alphabet noodles and cook everything together for another five to eight minutes until the pasta is tender.
  5. Sprinkle with finely chopped parsley before serving, if desired.

Good to know

You can easily prepare a larger batch of the broth and store it in the refrigerator. It is best to cook the noodles fresh in the required amount of broth each time so they do not become too soft.

When it is hard

If you are feeling very nauseous, simply leave out the parsley and carrots. Sip the clear, warm broth slowly from a mug to gently settle your stomach.
