A Cheerful and Spooky Family Meal

These stuffed peppers bring a cheerful, spooky vibe to your family table just in time for autumn. Carving the faces is often a lot of fun for many children and sparks their curiosity about the vegetables. At the same time, the savory filling provides valuable energy for active autumn days. Parents can easily prepare this meal together with their child.

Ingredients

For about 2 to 3 portions you will need:

  • 3 medium orange bell peppers (organic preferred)
  • 300 g fresh ground beef
  • 100 g long-grain rice
  • 1 small onion
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 150 ml mild vegetable broth
  • 1 tsp dried oregano
  • 1 tsp sweet paprika powder

Preparation

  1. Cook the rice according to the package instructions in unsalted water and set aside.
  2. Slice the tops off the bell peppers and carefully remove the seeds. Use a small knife to carve funny or spooky faces into the front of each pepper.
  3. Finely dice the onion and sauté it in a pan with olive oil until translucent. Add the ground beef and cook thoroughly until nicely browned and completely cooked through.
  4. Stir in the tomato paste, oregano, and paprika powder, cooking for another minute. Fold the cooked rice into the meat mixture and deglaze with the vegetable broth.
  5. Let the mixture simmer gently for about 5 minutes until the liquid has mostly evaporated and the texture is creamy.
  6. Fill the carved bell peppers with the meat and rice mixture, then place the pepper tops back on.
  7. Place the stuffed peppers in a baking dish and bake in a preheated oven at 200 degrees Celsius (top/bottom heat) for about 25 minutes.
  8. Allow the dish to cool down well before serving. Always check the temperature inside the filling before your child takes the first bite.

Variations & Tips

  • Vegetarian Alternative: The ground beef can easily be swapped for red lentils or a crumbled tofu mixture.
  • Storage: The stuffed peppers keep well in the fridge for up to two days when covered.
  • Freezing: You can freeze the prepared filling for up to three months and stuff it into fresh peppers when needed. It is best to freeze the mixture in convenient portions.
  • For the Whole Family: Parents can season their own portions at the table with a pinch of chili flakes or some salt for extra flavor.
