Spring Semolina Porridge with Rhubarb and Strawberry Compote

Ingredients

For the porridge (2 to 3 portions):

  • 500 ml whole milk (organic preferred)
  • 50 g soft wheat semolina
  • 1 tsp vanilla extract or the seeds of half a vanilla bean
  • 1 tbsp maple syrup (optional)

For the compote:

  • 150 g rhubarb
  • 150 g strawberries (fresh or frozen)
  • 1 tbsp water
  • 1 tbsp maple syrup or agave nectar

Preparation

  1. Wash the rhubarb thoroughly, peel it if necessary, and cut it into small pieces.
  2. Wash and hull the strawberries, then dice them finely as well.
  3. Place the fruit, a tablespoon of water, and a little maple syrup in a small saucepan. Let the mixture simmer gently over medium heat for about 10 minutes until the rhubarb breaks down and becomes soft.
  4. For the porridge, heat the milk and vanilla in a second saucepan over medium heat.
  5. Once the milk comes to a gentle boil, slowly whisk in the semolina to prevent lumps from forming.
  6. Let the porridge simmer on low heat for about 3 to 5 minutes until a smooth, creamy texture forms.
  7. Remove the pot from the stove and let the porridge cool down a bit.
  8. Always test the temperature before serving to ensure it is safe for your child. Serve the warm porridge topped with the compote.

Variations and Tips

  • Fruity Variety: When rhubarb season ends, this porridge tastes fantastic with a simple apple compote or diced peaches.
  • Storage: The prepared semolina porridge keeps well in the fridge for up to two days when covered. The compote freezes beautifully and can be thawed in small portions as needed.
  • For the Whole Family: Adults can enhance their compote with a pinch of cinnamon or a little grated ginger. Toasted sliced almonds make a great crunchy topping for older family members.
