Spring Tagliatelle with Green Asparagus and Mild Cream Sauce

Many children particularly enjoy the mild sweetness of green asparagus when it is combined with familiar ingredients like pasta and cream.

Ingredients

For two to three portions, you will need the following ingredients:

  • 250 g tagliatelle (organic preferred, as they often bring a richer flavor)
  • 250 g green asparagus (look for crisp, fresh spears)
  • 1 tbsp olive oil or mild butter for sautéing
  • 1 small onion (for a mild savory base)
  • 150 ml mild vegetable broth (low sodium is best)
  • 100 ml heavy cream (or oat cream as a plant-based alternative)
  • 1 pinch of nutmeg (adds a warm note to the sauce)
  • 1 tsp fresh parsley (finely chopped, brings a pop of color)
  • A little grated cheese (optional, for topping before serving)

Preparation

  1. Wash the green asparagus thoroughly under running water. Generously trim the woody ends at the bottom, as these can remain unpleasantly fibrous when chewed. Then, cut the asparagus spears into short pieces about two centimeters long.
  2. Cook the tagliatelle in plenty of water according to the package instructions until they are nice and soft. For toddlers, you can safely boil the pasta for an extra minute or two to make it easier to chew.
  3. Meanwhile, peel the onion, dice it very finely, and sauté it in a large pan with the olive oil until translucent. Take a few minutes for this step so the onion can release its natural sweetness.
  4. Add the prepared asparagus pieces and sauté gently over medium heat for about three minutes. This gentle pan-frying helps develop subtle roasted flavors.
  5. Deglaze the vegetables with the vegetable broth and cream. Let the sauce simmer gently for about five to seven minutes, until the asparagus is soft and the sauce thickens slightly.
  6. Season the sauce with a pinch of nutmeg and the freshly chopped parsley. Stir well so the spices are distributed evenly.
  7. Drain the cooked pasta and fold it directly into the warm sauce. Mix everything thoroughly until the pasta is completely coated with the sauce.
  8. Allow the dish to cool down sufficiently before serving. Always check the temperature before your child takes the first bite.

Variations and Tips

When asparagus is out of season, zucchini, broccoli florets, or young peas are excellent alternatives for this mild sauce. This makes the recipe a true all-rounder for the entire year.

You can store leftovers in an airtight container in the fridge for up to two days. Freezing the cream sauce is not highly recommended, as it can separate when thawed, and the pasta often becomes mushy.

For younger eaters, you can cut the asparagus even smaller or lightly puree the sauce at the end. This way, you can easily adapt the texture to the current preferences in your family.

Feel free to involve your child in the preparation. Washing the asparagus or picking the parsley leaves are great tasks for little helpers. Often, the willingness to try new dishes increases when children are allowed to help out in the kitchen.

Parents can wonderfully upgrade their own portion at the table with freshly ground black pepper, a little more salt, and toasted pine nuts. A splash of fresh lemon juice also gives the dish a fine freshness for adults.
