Spring Wild Garlic Pesto with Spaghetti for Kids
Introduction
When spring arrives, fresh wild garlic brings a wonderful variety to the family table. This mild pesto is ideal for children from three years of age, as it provides valuable energy for active days and awakens their taste for fresh herbs. The bright green color makes mealtime a fun experience and invites everyone to enjoy eating together.
Ingredients
- 250 g spaghetti (whole wheat is a great option for extra fiber)
- 50 g fresh wild garlic (organic if possible)
- 30 g pine nuts
- 40 g Parmesan cheese (block)
- 60 ml mild olive oil
- 1 splash of lemon juice
- A small pinch of salt (fine in moderation for kids over 3)
Preparation
- Cook the spaghetti in lightly salted water according to the package instructions until soft. This usually takes about ten to twelve minutes.
- Wash the wild garlic thoroughly, shake dry, and remove the thick stems. Finely grate the Parmesan cheese.
- Lightly toast the pine nuts in a pan without oil over medium heat until fragrant. Let them cool on a plate afterwards.
- Place the wild garlic, cooled pine nuts, Parmesan, olive oil, and lemon juice into a blender. Purée everything until a smooth, creamy paste forms.
- Fold the pesto into the warm pasta and mix well. Let the dish cool briefly and test the temperature before serving.
Variations & Tips
- Veggie Twist: Mix a handful of sweet peas into the warm pasta for an extra serving of vegetables.
- Storage: The pesto keeps well in a clean, sealed jar in the fridge for about three days. You can also freeze it perfectly in ice cube trays and thaw in small portions.
- Family Tip: Adults can easily spice up their own plates at the table with freshly ground black pepper or a pinch of chili flakes.
- Texture Adjustment: For younger siblings, you can cut the pasta into smaller pieces and stir the pesto with a spoonful of pasta water to make it even creamier.
Allergy & Safety Information
This recipe contains wheat (gluten), milk (Parmesan), and pine nuts. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions. Whole nuts and seeds pose a choking hazard for young children, which is why the pine nuts are puréed very finely in this pesto. If you have any uncertainties about your child's diet or potential allergies, please consult your pediatrician.
Nutritional Information
Fresh wild garlic provides important vitamin C and naturally supports the immune system. The pine nuts and olive oil contribute valuable unsaturated fatty acids, which are highly beneficial for children's brain development. Parmesan is also an excellent source of calcium for strong, growing bones.
