Spring Wild Garlic Potato Pancakes from the Oven

Spring not only brings warmer days but also fresh wild garlic into our kitchens. This wonderful wild herb adds a mild, garlic-like flavor to family meals, completely without the sharpness of real garlic. Seasonal cooking is a joy and helps children discover the rich variety of nature.

These oven-baked potato pancakes are delightfully soft and easy for little hands to grasp. They use very little fat, making them particularly gentle on the stomach. At the same time, they provide valuable energy for the day and make eating together at the family table a truly lovely experience for everyone.

Ingredients

For about two to three portions, you will need the following ingredients:

  • 500 g firm potatoes (preferably organic, so the skin can be used if desired)
  • 1 small bunch of fresh wild garlic (approx. 20 g)
  • 1 small egg
  • 2 tbsp fine rolled oats
  • 1 tbsp canola oil (plus a little extra for brushing the pancakes)
  • A tiny pinch of salt and mild pepper (perfectly fine in moderation for children from 12 months)

Preparation

  1. Preheat the oven to 200 degrees Celsius (top and bottom heat). Line a baking sheet with parchment paper so nothing sticks later.
  2. Wash and peel the potatoes thoroughly, then grate them coarsely using a kitchen grater. Place the grated potatoes in a clean kitchen towel and squeeze out the excess liquid firmly so the pancakes hold together well.
  3. Wash the fresh wild garlic thoroughly under running water and pat dry. Chop it very finely with a sharp knife, ensuring no long strings remain.
  4. In a large bowl, combine the prepared grated potatoes, the finely chopped wild garlic, the egg, the rolled oats, and the canola oil. Season everything with a tiny pinch of salt and pepper, and mix well until a uniform mixture is formed.
  5. Using your hands, shape the potato mixture into small, flat pancakes and place them on the prepared baking sheet with a little space between them. Brush the tops of the pancakes lightly with a little canola oil to help them achieve a beautiful golden-brown color in the oven.
  6. Bake the pancakes for about 20 to 25 minutes until they are crispy on the outside and fully cooked through.
  7. Allow them to cool well before serving. Please always check the temperature inside the pancakes before your child takes the first bite.

Variations & Tips

  • Carrot Mix: Replace half of the potatoes with grated carrots or zucchini. This adds a slightly sweet note and brings even more colorful vegetables to the plate.
  • Storage: The pancakes will easily keep in an airtight container in the fridge for up to two days. They also freeze wonderfully and can be quickly reheated in the toaster or oven as needed.
  • Texture adjustment: For children who are still practicing chewing, you can grate the potatoes much more finely. This makes the baked pancakes even softer and easier to break apart.
  • For the whole family: Adults can season their pancakes right at the table with a little more salt, pepper, and a fresh herb dip or applesauce.

  • This recipe contains egg, which is a recognized allergen. Always introduce new ingredients like wild garlic or egg one at a time and in small amounts to easily observe any potential allergic reactions.
  • Always make sure the wild garlic is chopped very finely. Long leaves or strings can be difficult to manage while chewing and might cause coughing.
