Steamed Cod in Dill Sauce with Boiled Potatoes

During pregnancy, a light and warm meal can feel incredibly comforting. This gently steamed cod in dill sauce with boiled potatoes has a mild flavor and is very easy on the stomach. Fish also provides valuable nutrients to support you and your developing baby.

Ingredients

  • 400 g cod fillet (fresh or thawed)
  • 500 g waxy potatoes
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 250 ml vegetable broth
  • 100 ml heavy cream (pasteurized)
  • 2 tbsp fresh dill (chopped)
  • A splash of lemon juice
  • Salt and mild pepper

Preparation

  1. Peel the potatoes and boil them in lightly salted water until tender.
  2. Meanwhile, melt the butter in a small saucepan over medium heat.
  3. Whisk in the flour and cook it briefly.
  4. Gradually pour in the vegetable broth and the cream while stirring continuously.
  5. Let the sauce simmer gently for a few minutes until it thickens.
  6. Place the cod fillet into the sauce and let it poach over low heat for about ten minutes.
  7. Ensure the fish is cooked completely through before serving.
  8. Season the sauce with dill, lemon juice, salt, and a little pepper.
  9. Serve the fish and sauce warm alongside the boiled potatoes.

Good to know

Fresh dill gives the dish a lovely bright flavor, but frozen dill works just as well. If you have leftovers, store them in the refrigerator and reheat them thoroughly the next day.

When things feel difficult

If you are experiencing heartburn or nausea, you can replace the cream in the sauce with a little extra broth. Sometimes it also helps to steam the fish plain with a drop of oil and simply eat it with the mild potatoes.
