Stuffed Mini Peppers with Herb Cottage Cheese

Introduction

These colorful, stuffed mini peppers make a wonderfully refreshing snack for children three years and older. They combine crisp vegetables with creamy, protein-rich cottage cheese and fresh herbs. Snacking together is a lot of fun and gently encourages the acceptance of raw vegetables in everyday life. Many children love to pick up their food with their fingers, which also supports fine motor skills. Especially on warm days or after an active afternoon at the playground, this dish offers a welcome refreshment. The bright colors of the peppers spark curiosity and invite little ones to taste.

Ingredients

  • 8 mini bell peppers (organic recommended, ideally in different colors)
  • 150 g cottage cheese
  • 2 tbsp plain yogurt (mild, whole milk for a creamy texture)
  • 2 tbsp fresh herbs (such as chives, parsley, or a little dill, finely chopped)
  • A tiny pinch of salt (use very sparingly for young children)
  • A splash of fresh lemon juice

Preparation

  1. Wash the mini peppers thoroughly under running water and dry them gently.
  2. Cut each pepper in half lengthwise and carefully remove the seeds and white membranes using a small spoon or your fingers.
  3. In a separate bowl, mix the cottage cheese with the plain yogurt until a creamy, cohesive mixture forms.
  4. Stir in the finely chopped herbs and gently season the mixture with a tiny pinch of salt and a splash of lemon juice.
  5. Using a teaspoon, generously fill the prepared pepper halves with the herb and cottage cheese cream, then arrange them on a plate.
  6. Serve the snack immediately or let it rest in the fridge for about ten minutes. Please check that the temperature is pleasant before eating, especially if the peppers come straight from a very cold fridge.

Variations & Tips

  • Try different vegetables: Instead of peppers, you can also fill hollowed-out cucumber slices, mild radishes, or small cherry tomatoes with the cream.
  • Storage advice: The stuffed peppers will keep in an airtight container in the fridge for about one to two days. Unfortunately, freezing is not suitable for this recipe, as peppers and cottage cheese become watery and lose their texture after thawing.
  • Adjusting the texture: For children who do not yet enjoy the chunky texture of cottage cheese, you can briefly blend the cheese mixture with an immersion blender until smooth.
  • Tip for the whole family: Adults can enhance their own portion with a little freshly ground black pepper, garlic powder, spring onions, or mild chili flakes.

Allergy & Safety

This recipe contains milk via the cottage cheese and yogurt, which is one of the major EU14 allergens. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions your child might have. Although this recipe is intended for older children, the general rule applies that honey must not be given under 12 months due to the risk of infant botulism. Nuts must always only be offered finely ground or as a butter to prevent choking. If you have any uncertainties about introducing complementary foods or general nutrition, it is always best to consult your pediatrician.
