Stuffed Peppers with Minced Meat and Rice for Families

Introduction

Stuffed peppers are a wonderful family meal that often becomes a quick favorite. Gentle braising makes the vegetables wonderfully soft, allowing children from about three years old to chew them easily. At the same time, the combination of meat, rice, and vegetables provides valuable energy for active days.

Ingredients

For 2 to 3 portions you will need:

  • 3 medium bell peppers (organic if possible, red or yellow)
  • 250 g mixed minced meat (beef and pork)
  • 50 g rice (weighed dry, for example parboiled or basmati)
  • 1 small onion
  • 1 clove of garlic
  • 400 g chopped tomatoes (canned or from a jar)
  • 200 ml mild vegetable broth
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp sweet paprika powder
  • A small pinch of salt and pepper

Preparation

  1. Cook the rice according to the package instructions in unsalted water until almost done, then drain.
  2. Wash the bell peppers, cut off the tops, and carefully remove the seeds and white membranes.
  3. Peel the onion and garlic, then chop them into very fine cubes.
  4. In a bowl, mix the minced meat well with the pre-cooked rice, half of the diced onion, oregano, paprika powder, and a small pinch of salt and pepper.
  5. Fill the prepared bell peppers evenly with the meat mixture and place the tops back on.
  6. Heat the olive oil in a wide pot and sauté the remaining onion and garlic until translucent.
  7. Pour in the chopped tomatoes and vegetable broth, bringing everything to a brief boil.
  8. Place the stuffed peppers into the sauce, cover the pot, and let them braise gently over medium heat for about 30 to 35 minutes.
  9. Allow the dish to cool down well before serving. Please test the temperature of the filling before your child takes the first bite.

Variations and Tips

  • Vegetarian option: Replace the minced meat with red lentils or a finely crumbled tofu mixture.
  • Storage: Leftovers can be kept covered in the fridge for up to two days. The dish also freezes beautifully and will keep in the freezer for about three months.
  • Texture adaptation: For younger siblings, you can easily mash the filling and soft pepper with a little sauce.
  • Tip for parents: If you prefer a bolder flavor, you can season your own portion at the table with chili flakes or a little more salt.

Allergy and Safety Information

This recipe is generally well tolerated. It is best to introduce new ingredients one at a time and in small amounts to easily observe any possible reactions. When cooking meat dishes, always ensure that the minced meat is cooked through completely.

Whole nuts or honey are not used here, but remember generally to avoid honey entirely during the first year of life. If you have any uncertainties about introducing complementary foods or possible intolerances, please always consult your pediatrician.
