
Stuffed Summer Peppers with Creamy Couscous for Toddlers
Softly roasted red peppers from the summer sun, filled with a mild couscous, invite your child to explore new flavors. A little cream cheese makes the filling wonderfully creamy, so it does not fall apart easily during eating. This makes sharing meals at the family table a truly joyful experience.
This recipe is wonderfully suited for family meals starting around the first birthday. It requires very little salt and offers a great way to serve vegetables in an appealing manner.
Ingredients
- 2 medium red bell peppers (organic preferred)
- 60 g couscous
- 120 ml mild vegetable broth (low sodium)
- 2 tbsp cream cheese (full fat)
- 1 small mild onion
- 1 tbsp canola oil
- 1 pinch sweet paprika powder
- A little fresh parsley
Preparation
- Preheat the oven to 180 degrees Celsius on standard top and bottom heat.
- Wash the bell peppers, cut off the tops, and carefully remove all the seeds.
- Dice the onion very finely and sauté it in a pan with the canola oil until translucent.
- Place the couscous in a bowl, pour the hot vegetable broth over it, cover, and let it swell for about five minutes.
- Mix the swollen couscous with the onions, cream cheese, paprika powder, and finely chopped parsley until a smooth, creamy texture is formed.
- Fill the bell peppers with the couscous mixture, place them in a small baking dish, and bake in the oven for about 25 to 30 minutes until soft.
- Allow the dish to cool down well before serving, and always do a temperature test before feeding your child or letting them eat independently.
Variations and Tips
- Swap the vegetables: You can also hollow out and fill small zucchini instead of bell peppers.
- For the whole family: Adults can simply season their portion at the table with a little salt, pepper, or a pinch of chili.
- Storage: Leftovers keep well in the fridge for up to two days when covered. The dish can also be easily frozen and reheated in the oven when needed.
- Adjusting the texture: If your child cannot chew the pepper skin easily yet, you can often peel it off very easily after baking.
Allergy Notes and Safety
This recipe contains gluten in the couscous and dairy in the cream cheese. Always introduce new ingredients individually and in small amounts to observe any potential reactions.
Even though honey is allowed from twelve months, this recipe completely avoids added sugar. When using nuts or seeds in other dishes, make sure to offer them only finely ground, as there is otherwise a risk of choking.
