Ingredients
- 100 g polenta (cornmeal, organic if possible)
- 400 ml water or mild vegetable broth (low sodium)
- 150 g fresh, ripe tomatoes
- 1 tbsp olive oil
- 1 tbsp grated Parmesan cheese (optional, for flavor)
- A little fresh basil (finely chopped)
- A tiny pinch of salt (acceptable in moderation for toddlers over 12 months)
Preparation
- Preheat the oven to 180 degrees Celsius (standard bake setting).
- Wash the tomatoes, remove the core, and cut them into very fine cubes.
- Bring the water or mild broth to a boil in a medium pot.
- Slowly whisk in the polenta, stirring constantly to prevent any lumps from forming.
- Reduce the heat and let the mixture simmer gently for about 10 minutes, until a smooth and creamy consistency is reached.
- Remove the pot from the heat and stir in the diced tomatoes, olive oil, Parmesan, and basil.
- Spread the polenta mixture about one to two centimeters thick onto a baking sheet lined with parchment paper or into a baking dish.
- Bake in the preheated oven for about 15 minutes, until the mixture is firm.
- Let the polenta cool completely, cut it into manageable slices, and always check the temperature before serving.

- Vegetable swap: Instead of tomatoes, finely grated zucchini or carrots also work beautifully in the polenta mixture.
