
Summer Grilled Corn on the Cob with Baked Potatoes and Herb Butter
This summer dish is a true highlight for children aged three and older, sparking joy during shared family meals outdoors. Ingredients
- 2 to 3 fresh ears of corn (organic if possible)
- 500 g firm potatoes
- 3 tablespoons olive oil
- 1 teaspoon mild paprika
- 50 g soft butter
- 2 tablespoons mixed fresh herbs (for example parsley, chives, a little dill)
- 1 small pinch of salt
Preparation
- Preheat the oven to 200 degrees Celsius (convection).
- Wash the potatoes thoroughly, cut them into bite sized wedges, and toss them in a bowl with the olive oil and paprika.
- Spread the potato wedges on a baking sheet and bake them in the oven for about 25 to 30 minutes until golden brown.
- Meanwhile, mix the soft butter with the finely chopped herbs and a tiny pinch of salt until a smooth and creamy texture forms.
- Cook the corn on the cob on the grill or in a grill pan over medium heat for about 15 minutes, turning occasionally until tender with light grill marks.
- Allow the dish to cool down well before serving. Please check the temperature before your child takes a bite.
Variations and Tips
- Vegetable variation: Instead of corn on the cob, grilled zucchini slices or bell peppers taste excellent alongside the potatoes.
- For the whole family: Adults can easily season their own portions at the table with a little more salt, pepper, or a pinch of chili flakes.
- Storage: Leftover baked potatoes keep well in the refrigerator for up to two days when covered. The herb butter freezes wonderfully in small ice cube trays.
