Summer Grilled Corn on the Cob with Mild Herb Butter

Ingredients

  • 2 to 3 fresh ears of corn (organic preferred, look for plump and shiny kernels)
  • 50 g softened butter (take it out of the fridge ahead of time)
  • 1 tbsp finely chopped fresh herbs (such as parsley, chives, or mild basil)
  • A small pinch of salt (use very sparingly for children)
  • Optional: A splash of fresh lemon juice for a light tang

Preparation

  1. Carefully remove the green husks and fine silks from the corn, then wash the cobs thoroughly under running water.
  2. Bring a large pot of unsalted water to a boil. Add the corn and cook for about 10 to 15 minutes until tender. You can use a fork to check if the kernels are nice and soft.
  3. Meanwhile, prepare the softened butter in a small bowl. Add the finely chopped herbs, a small pinch of salt, and the splash of lemon juice. Mash everything together well with a fork until a smooth, creamy mixture forms.
  4. Place the precooked corn on the grill (over medium heat) or in a grill pan. Roast for about 5 to 8 minutes, turning regularly until golden brown all around.
  5. Brush the warm ears of corn generously with the prepared herb butter while they are still hot, allowing the butter to melt beautifully into the gaps.
  6. Let the corn cool down well before serving, and always check the temperature to ensure your child does not burn their mouth on the hot kernels.

Variations and Tips

  • Vegetable Variation: The mild herb butter also tastes delicious on grilled zucchini slices, mild bell pepper strips, or small potatoes.
  • For the Whole Family: Adults can spice up their portions directly at the table with some garlic, fine chili flakes, or extra salt to suit their taste. This way, everyone eats the same meal, just adapted to individual preferences.
  • Storage: The herb butter keeps well in the fridge in an airtight container for up to five days. It can also be easily frozen in an ice cube tray and thawed in small portions as needed.
  • Adjusting Texture: For younger children who are still learning to bite directly off the cob, you can carefully slice the kernels off the cob with a sharp knife after grilling. Mixed with the butter in a small bowl, they are easy to eat with a spoon.
