Summer Pasta Salad with Sweet Cherry Tomatoes and Mozzarella
A light family meal for hot summer days or outdoor picnics that many children age three and up truly enjoy. The small mozzarella balls and soft pasta are easy to spear with a fork, providing wonderful energy for active afternoons. A mild dressing made from a little olive oil and cloudy apple juice rounds off the dish with a touch of natural sweetness.
Ingredients
- 150 g short pasta (for example fusilli or farfalle, whole wheat is a great choice)
- 150 g sweet cherry tomatoes (organic if possible)
- 100 g mini mozzarella balls
- 2 tbsp mild olive oil
- 2 tbsp cloudy apple juice
- 1 tsp mild vinegar (like apple cider vinegar)
- A few fresh basil leaves
- A tiny pinch of iodized salt and mild pepper
Preparation
- Boil the pasta in lightly salted water according to the package instructions until soft. This usually takes about 10 to 12 minutes.
- Drain the cooked pasta, rinse briefly with cold water, and let it cool in a large bowl.
- Wash the cherry tomatoes and halve or quarter them, depending on their size. Halve the mini mozzarella balls as well to make them easier for your child to chew.
- For the dressing, whisk together the olive oil, apple juice, vinegar, and a tiny pinch of salt and pepper in a small bowl until smooth.
- Add the tomatoes, mozzarella, and dressing to the pasta and mix everything thoroughly. Tear the fresh basil into small pieces and gently fold it in.
- Let the salad cool completely and allow the flavors to blend before serving. Always check the temperature before offering it to your child if the pasta was still slightly warm.
Variations and Tips
- Swap the vegetables: Instead of tomatoes, mild cucumber pieces or softly steamed zucchini slices fit perfectly into this salad.
- Storage: The pasta salad keeps well for about two days in the refrigerator when covered tightly. This recipe is not suitable for freezing due to the fresh vegetables and cheese.
- For the whole family: Parents can easily upgrade their portions at the table with toasted pine nuts, a handful of arugula, and a drizzle of balsamic glaze.
- Adjusting the texture: For younger siblings, you can cook the pasta a bit longer until very soft and dice the tomatoes and mozzarella into very fine pieces.
Allergies and Safety
This recipe contains wheat (gluten) and dairy (lactose), which are common allergens. Always introduce new foods one at a time and in small amounts to easily monitor for any reactions.
Make sure to always halve or quarter small, round foods like cherry tomatoes or mozzarella balls. This significantly reduces the risk of choking for young children.
If you have any concerns about your child's diet or questions regarding potential allergies, talk to your pediatrician.
