Summer Red Berry Compote with Fresh Berries and Vanilla Sauce

Summer red berry compote is a wonderful way to celebrate the warm season with your child. Washing or even picking the fresh fruit together is often a lot of fun for the little ones. The scent of the homemade vanilla sauce will surely bring the whole family to the table.

Enjoying this treat together in the afternoon or as a special weekend dessert becomes a delightful experience. The natural sweetness of the fruit takes center stage, meaning there is no need for large amounts of added sweeteners.

Ingredients

For the berry compote (2 to 3 portions):

  • 500g mixed berries (for example raspberries, currants and cherries, ideally organic quality)
  • 200ml mild apple juice
  • 1 tbsp maple syrup or agave nectar
  • 2 tbsp cornstarch
  • 2 tbsp water

For the vanilla sauce:

  • 250ml whole milk
  • 1 fresh egg yolk
  • 1 tsp maple syrup
  • Seeds of half a vanilla bean
  • 1 tsp cornstarch

Preparation

  1. Wash and clean the berries thoroughly. Pay special attention to the cherries and ensure all pits are carefully removed.
  2. Bring the berries, apple juice and maple syrup to a boil in a medium pot.
  3. Let the fruit mixture simmer gently over medium heat for about five minutes until the berries soften.
  4. Mix the cornstarch with the water in a small cup until smooth.
  5. Stir the starch mixture into the boiling berries while stirring constantly. Let everything boil briefly until a thick, smooth consistency forms, then remove the pot from the heat.
  6. For the vanilla sauce, heat the milk and vanilla seeds in a small pot. The milk should become hot but must not boil.
  7. Whisk the egg yolk, maple syrup and cornstarch in a separate bowl until smooth. Slowly stir in the warm vanilla milk with a whisk.
  8. Pour everything back into the pot. Let the sauce thicken over low heat while stirring constantly. The mixture is heated sufficiently during this process but must not boil, or the egg will scramble.
  9. Let both components cool down well. Always test the temperature before feeding or serving.

Variations and Tips

  • Fruity alternatives: Outside the berry season, you can easily make this recipe with frozen fruit. In late summer, finely chopped peaches or apricots are also excellent choices.
  • Practical storage: The compote keeps well in a sealed container in the fridge for up to three days. It also freezes beautifully. Simply portion the mixture into small containers or ice cube trays.
  • Texture adjustment: For children who dislike fruit pieces in their dessert, you can finely puree the cooked berries before thickening them with cornstarch.
  • Quick version: If time is short, the red berry compote also tastes fantastic with a dollop of plain yogurt or a little oat cream instead of the vanilla sauce.
  • Little helpers: Let your child help with the preparation. Washing the berries in a small sieve is a great task for little hands and encourages a positive relationship with food.
