Ingredients

  • 200 g zucchini (organic if possible)
  • 200 g potatoes (waxy or all-purpose)
  • 1 small egg
  • 3 tbsp rolled oats (fine)
  • 1 tbsp canola oil
  • 1 pinch mild paprika
  • 1 pinch salt (use very sparingly)

Preparation

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper and brush lightly with a little canola oil.
  2. Wash and peel the zucchini and potatoes if necessary, then grate them finely. Place the grated vegetables in a clean kitchen towel and squeeze out the excess liquid firmly.
  3. In a bowl, mix the squeezed vegetables with the egg, oats, canola oil, and spices until a sticky mixture forms.
  4. Use a tablespoon to place small portions on the baking sheet and press them flat. Bake the fritters in the preheated oven for about 15 to 20 minutes until golden brown.
  5. Carefully flip the fritters halfway through the baking time. Let them cool down well before serving, and always test the temperature before your child takes a bite.

Variations and Tips

  • Swap the veggies: You can easily replace the zucchini with grated carrots or sweet potatoes.
  • Storage: The fritters will keep in an airtight container in the fridge for up to two days. They also freeze beautifully and can be reheated in the toaster or oven when needed.
  • For the parents: Adults can easily spice up their portions at the table with extra salt, pepper, or a savory herb dip.
  • Adjusting texture: If your child prefers softer foods, you can make the fritters slightly thicker and reduce the baking time just a bit.
