Sweet Braided Nut Wreath for Little Bakers

Baking this juicy nut wreath together is a wonderful experience for little kitchen helpers. Kneading, rolling, and braiding playfully train fine motor skills and an understanding of dough structures. At the same time, the nutty filling provides valuable energy for active afternoons.

Ingredients for a small wreath

  • 250 g spelt flour (type 630 or all-purpose)
  • 100 ml lukewarm milk
  • 10 g fresh yeast (or 1 tsp active dry yeast)
  • 30 g soft butter
  • 1 tbsp maple syrup
  • For the filling: 100 g finely ground hazelnuts (organic preferred)
  • 3 tbsp milk (for the filling)
  • 1 tbsp maple syrup (for the filling)
  • 1/2 tsp cinnamon

Preparation

  1. Mix the lukewarm milk with the yeast and maple syrup in a bowl. Add the flour and soft butter.
  2. Knead everything into a smooth, supple dough. Cover the dough and let it rest in a warm place for about 45 minutes, until the volume has visibly increased.
  3. For the filling, mix the finely ground hazelnuts, milk, maple syrup, and cinnamon into a spreadable paste.
  4. Roll out the dough into a rectangle on a floured surface. Spread the nut mixture evenly over it, leaving a small border.
  5. Roll the dough up tightly from the long side. Cut the roll lengthwise down the middle with a knife.
  6. Carefully twist the two strands around each other, keeping the cut sides facing up. Form into a wreath and press the ends together firmly.
  7. Place the wreath on a baking sheet and bake in a preheated oven at 180 degrees Celsius (about 350 degrees Fahrenheit) for 20 to 25 minutes until golden brown. Let it cool completely and check the temperature before serving.

Variations and Tips

Instead of hazelnuts, finely ground almonds work beautifully for the filling. For extra moisture, you can mix a small grated apple into the nut paste.

The nut wreath stays fresh in the fridge, covered, for two to three days. It also freezes exceptionally well in slices and can be quickly warmed in the toaster when needed.

For adults or older children, the filling can be enhanced with a pinch of cardamom or a little unsweetened cocoa powder. For younger siblings from one year old, you can also shape the dough into small, soft rolls without any filling.

Allergy Information and Safety

This recipe contains gluten (spelt flour), dairy (butter, milk), and tree nuts (hazelnuts). Always introduce new ingredients one at a time and in small amounts to monitor for any reactions.

Nuts pose a choking hazard for young children. Therefore, use exclusively very finely ground nuts and never whole or coarsely chopped pieces. Honey is not used in this recipe, as it is unsafe for babies under 12 months due to the risk of infant botulism.
