Sweet Strawberry Oat Pancakes for Toddlers

Ingredients

  • 150 g fresh strawberries (washed and hulled)
  • 100 g rolled oats
  • 50 g spelt flour or all-purpose flour
  • 1 egg
  • 100 ml cow's milk (or plant-based milk)
  • 1 tsp baking powder
  • 1 tsp canola oil or coconut oil (for the pan)
  • Optional: 1 tsp honey (only for children over 12 months)

Preparation

  1. Blend the washed strawberries, milk, and egg together using a blender or immersion blender until smooth.
  2. Mix the rolled oats, flour, and baking powder in a medium mixing bowl.
  3. Pour the liquid strawberry mixture into the dry ingredients and stir until you have a smooth, thick batter. Let the batter rest for about 10 minutes to allow the oats to soften.
  4. Heat a little oil in a non-stick skillet over medium heat.
  5. Spoon one to two tablespoons of batter per pancake into the pan and cook for 2 to 3 minutes on each side until golden brown.
  6. Let the finished pancakes cool on a plate. Always check the temperature before serving to ensure they are comfortably warm for your child.

Variations & Tips

  • Fruity swaps: Outside of strawberry season, you can easily use blueberries or a ripe banana directly in the batter.
  • Storage: These pancakes will keep in the fridge in an airtight container for about 2 days. They freeze beautifully and can be thawed individually in the toaster or oven.
  • Family meal: For older children and adults, serve the pancakes at the table with a drizzle of maple syrup, yogurt, or extra fresh fruit.
  • Texture adjustments: If your child is still practicing their pincer grasp, cut the pancakes into bite-sized strips that are especially easy to hold.
