Süßer Erdbeer-Rhabarber-Crumble mit knusprigen Haferflocken-Streuseln

Sweet Strawberry Rhubarb Crumble with Crispy Oat Streusel

Seasonal2+y 40 min 4 VeggieMedium
Contains: Gluten, Dairy

Introduction

This fruity strawberry rhubarb crumble brings early summer right to your table and is a wonderful dessert for children aged three and older. The gentle tartness of the rhubarb harmonizes perfectly with the natural sweetness of ripe strawberries. At the same time, the combination of soft baked fruits and crispy oats encourages sensory exploration while chewing. It is a lovely recipe to prepare together in the kitchen, measuring ingredients and building excitement for the family meal. Older children and teenagers especially enjoy kneading the streusel dough by hand.

Ingredients

For 2 to 3 portions, you will need:

  • 200 g fresh strawberries (organic if possible)
  • 150 g rhubarb
  • 1 tbsp maple syrup or agave nectar
  • 50 g rolled oats
  • 40 g spelt flour
  • 40 g soft butter
  • 1 tsp Ceylon cinnamon

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake) and lightly grease a small baking dish.
  2. Wash the strawberries, remove the green tops, and cut them into small pieces.
  3. Wash the rhubarb, trim the ends, peel if necessary, and slice thinly.
  4. Spread the fruit pieces in the baking dish and drizzle with the maple syrup.
  5. In a bowl, use your hands to knead the oats, spelt flour, soft butter, and cinnamon into a crumbly mixture.
  6. Distribute the streusel evenly over the fruit mixture.
  7. Bake the crumble in the oven for about 20 to 25 minutes, until the topping is golden brown and the fruit is bubbling softly.
  8. Let it cool thoroughly before serving and always check the temperature, as the baked fruit retains a lot of heat.

Variations & Tips

  • Swap the fruit: In late summer, this crumble tastes delicious using apples, pears, or plums instead of rhubarb. This allows you to adapt the recipe to the changing seasons all year round.
  • Family tip: For adults and older siblings, the dessert pairs beautifully with a scoop of vanilla ice cream, a little whipped cream, or a dollop of plain yogurt.
  • Storage: The crumble keeps well covered in the fridge for about two days. You can gently reheat it in the oven when needed to make the topping crispy again.
  • Adjusting texture: For younger children, the fruit can be diced even finer before baking to make it easier to manage. You can also crumble the topping into smaller pieces.
  • Freezing: The baked dessert freezes well in small, airtight containers. Thaw it gently overnight in the refrigerator before reheating.

Allergy & Safety Information

This recipe contains gluten from the oats and spelt flour, as well as dairy in the form of butter. Always introduce new foods one at a time and in small amounts to easily observe any potential reactions in your child. Rhubarb contains oxalic acid and is generally recommended in moderation for children starting around three years of age. If you have any uncertainties about your child's diet or suspect an allergy, please consult your pediatrician.

Nutritional Information

This dish provides valuable vitamin C from the fresh strawberries, helping to support the immune system naturally. The rolled oats add important dietary fiber, which promotes good digestion and helps keep energy levels steady. Especially during active growth phases, children benefit from this nutrient-rich combination. Additionally, the spelt flour offers valuable B vitamins and minerals to support their daily activities.
