Tender Baked Salmon with Dill Potatoes and Sweet Peas

Introduction

This juicy baked salmon is a wonderful meal for the entire family. Fish provides valuable building blocks for brain development and has a very mild flavor when prepared gently in the oven. The combination of tender salmon, sweet peas, and delicate dill potatoes is a hit with many children.

Ingredients

  • 400 g salmon fillet (fresh or thawed, organic if possible)
  • 500 g firm potatoes
  • 200 g frozen peas
  • 2 tbsp olive oil
  • 1 bunch fresh dill (or 2 tsp dried dill)
  • A splash of lemon juice
  • A small pinch of salt and pepper

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  2. Peel the potatoes, cut them into bite sized pieces, and boil them in a pot of water for about 15 minutes until tender.
  3. Thoroughly check the salmon fillet for bones and place it in a baking dish. Brush with one tablespoon of olive oil, add a tiny pinch of salt, and bake for 12 to 15 minutes.
  4. Simmer the frozen peas in a small pot with a little water for about 5 minutes until soft.
  5. Finely chop the dill. Drain the cooked potatoes and toss them with the remaining olive oil and the dill.
  6. Remove the salmon from the oven, add a splash of lemon juice, and serve alongside the potatoes and peas. Always let the food cool down and test the temperature before feeding your child.

Variations & Tips

  • Instead of peas, steamed carrot sticks or broccoli florets also make a wonderful, mild side dish.
  • Leftover cooked fish can be stored covered in the refrigerator for one day. However, reheating fish for young children is often not recommended due to texture changes.
  • For younger siblings, you can easily mash the potatoes and peas with a fork to adjust the texture to their needs.
  • Adults can season their own portions at the table with extra salt, pepper, and a rich lemon sauce to taste.
