- 300 g beef goulash (organic preferred)
- 250 g carrots
- 1 small onion

- 1 pinch dried thyme
- 150 g wide ribbon noodles
Preparation
- Cut the beef into small, bite-sized pieces so that it fits easily onto a fork later. Peel and finely dice the onion.
- Heat the canola oil in a large braising pot. Gently brown the meat on all sides over medium heat until lightly roasted.
- Add the finely diced onion to the meat and sauté for a few minutes until translucent. Stir in the tomato paste and sweet paprika powder, roasting them briefly until fragrant.
- Pour the low sodium vegetable broth into the pot to deglaze it. Add the dried thyme and bring everything to a quick boil.
- Reduce the heat and let the goulash simmer gently with the lid closed for about 90 minutes. Stir occasionally to ensure nothing sticks to the bottom of the pot.
- Meanwhile, peel the carrots and cut them into thin, bite-sized slices. After about 60 minutes of braising time, add the carrots to the meat and cook them for the remaining time.
- About 15 minutes before the end of the cooking time, boil the wide ribbon noodles in a separate pot according to the package instructions until soft. Drain and set aside.
- Allow the finished goulash to cool down a bit before serving until it reaches a pleasant eating temperature. Always test the temperature carefully before offering the dish to your child.
