Tender Boiled Beef with Root Vegetables and Potatoes for Toddlers

Introduction

Ingredients

  • 300 g beef boiling cut (like brisket or rump, preferably organic)
  • 500 ml low-sodium beef or vegetable broth
  • 2 medium carrots (approx. 150 g)
  • 1 small piece of celeriac (approx. 100 g)
  • 3 medium potatoes (approx. 250 g)
  • 1 bay leaf (remove before serving)
  • 1 pinch of mild black pepper
  • 1 tbsp canola oil or unsalted butter

Preparation

  1. Rinse the beef under cold water and pat it dry. Bring the broth to a boil in a medium-sized pot.
  2. Add the meat and the bay leaf to the boiling broth. Reduce the heat, cover the pot, and let it simmer gently for about 1.5 to 2 hours until the meat is very tender.
  3. Meanwhile, peel the carrots, celeriac, and potatoes. Cut everything into small, bite-sized cubes.
  4. About 25 minutes before the meat is done, add the diced vegetables and potatoes to the pot. Cook everything together until the vegetables are fork-tender.
  5. Remove the meat from the broth, discard the bay leaf, and shred the beef finely against the grain.
  6. Scoop out the vegetables and potatoes with a slotted spoon, toss them with the oil or butter, and serve alongside the beef. Always let the meal cool down and check the temperature before feeding your child.

Variations and Tips

  • Mix up the veggies: Feel free to swap the celeriac for parsnips or sweet potatoes if your child prefers a sweeter taste.
  • For the adults: Season your own portion at the table with a little salt, fresh horseradish, and chopped chives.
  • Adjust the texture: For children who are still getting used to chunks, you can lightly mash the vegetables and potatoes with a splash of the cooking broth.
  • Storage: Leftovers keep well in an airtight container in the fridge for about two days. You can also freeze this meal in individual portions for a quick dinner later.
