
Tender Oven Baked Chicken Schnitzel with Colorful Carrots
Crispy oven baked chicken schnitzel is a wonderful family meal that many children from the age of three truly enjoy. The combination of tender meat and slightly sweet carrots provides valuable energy for an active day. At the same time, this dish is lower in fat than traditionally fried schnitzel and is very relaxing to prepare.
Ingredients
- 300 g chicken breast fillet (organic if possible)
- 2 tbsp wheat or spelt flour
- 1 egg
- 50 g breadcrumbs (or panko for extra crispiness)
- 2 tbsp canola or olive oil
- 400 g colorful carrots (orange, yellow, purple)
- 1 tsp butter
- A pinch of mild paprika
- A tiny pinch of salt and pepper
- 1 tbsp fresh chopped parsley
Preparation
- Preheat the oven to 200 degrees Celsius (top and bottom heat). Line a baking sheet with parchment paper.
- Rinse the chicken breast under cold water, pat dry, and cut into flat pieces about the thickness of a finger.
- Set up a breading station with three shallow bowls: one with flour, one with the beaten egg, and one with the breadcrumbs mixed with paprika, salt, and pepper.
- Coat the chicken pieces one by one: first in the flour, then dip them into the egg, and finally roll them in the breadcrumbs until fully covered.
- Place the breaded schnitzels on the baking sheet and brush or drizzle them with the oil. Bake in the preheated oven for about 15 to 20 minutes until golden brown and completely cooked through.
- Meanwhile, peel the carrots and cut them into thin slices. Steam them in a small pot with a little water for about 10 minutes until soft.
- Drain the water, fold the butter and parsley into the carrots, and mix well.
- Let the dish cool down before serving. Always check the temperature before your child takes the first bite.
Variations and Tips
- Swap the veggies: Instead of carrots, mild kohlrabi sticks or small broccoli florets make a great side dish.
- For the whole family: Adults can enhance the schnitzel with a squeeze of fresh lemon and enjoy it with a fresh potato salad.
- Storage: Leftovers will keep in the fridge for about two days. You can also freeze the raw, unbreaded chicken pieces and prepare them fresh when needed.
- Adjusting texture: For younger siblings, you can cut the cooked meat into very small, easily chewable bite sized pieces.
Allergy and Safety
This recipe contains egg and gluten (wheat flour, breadcrumbs). Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions. Make sure that poultry is always completely cooked through before serving.
Do not give honey to children under twelve months of age, as there is a risk of infant botulism. Nuts and seeds are only suitable for toddlers in finely ground form or as a butter to avoid any choking hazard.
