Introduction

Ingredients
- 60 g fine spelt flour (ideally organic)
- 120 ml whole milk (alternatively breastmilk or formula)
- 1 teaspoon canola oil (for the batter)
- 1 teaspoon canola oil (for cooking)
- 4 tablespoons unsweetened applesauce (100 percent fruit)
Preparation
- In a bowl, whisk the spelt flour, milk, and one teaspoon of canola oil until you have a smooth batter. Let the batter rest for about 10 minutes until it thickens slightly.
- Heat a non-stick skillet over medium heat and spread one teaspoon of canola oil in the pan.
- Pour a small amount of batter into the pan and cook a thin pancake for 2 to 3 minutes on each side until golden brown. Make sure the pancake is fully cooked through.
- Transfer the finished pancake to a plate and let it cool completely.
- Spread a thin layer of applesauce over the cooled pancake, roll it up tightly, and cut it into small, bite-sized spirals. Always check the temperature before offering it to your child.
Variations & Tips
- Fruity variety: Simply swap the applesauce for mild pear puree or fine peach puree.
- For the whole family: Parents can sprinkle their pancakes with a little cinnamon or add fresh fruit on the side.
- Storage: Plain pancakes can be kept covered in the refrigerator for up to two days. Freezing the filled rolls is not recommended as they can become soggy.
- Texture adjustment: For children just starting their solids journey, you can soak a piece of the soft pancake in a little milk and mash it smoothly until it reaches a puree-like consistency.
