Introduction

This thick cherry sheet pan pancake is a wonderful summer meal for children aged three and up. Baking it in the oven makes the batter beautifully fluffy, while the soft cherries invite cheerful exploration. Eating by hand naturally encourages the fine motor skills of little fingers. The mild sweetness of the fruit quickly makes this recipe a true family favorite.

Ingredients

Two to three portions, suitable for a small baking sheet or a medium baking dish:

  • 150 g spelt flour (preferably organic)
  • 200 ml whole milk
  • 3 eggs
  • 1 tbsp maple syrup or agave nectar
  • 1 tsp baking powder
  • 0.5 tsp ground vanilla
  • 200 g fresh sweet cherries (pitted)
  • 1 tbsp soft butter (for greasing)

Preparation

  1. Preheat the oven to 200 degrees Celsius (top and bottom heat) and grease a small baking sheet with the soft butter.
  2. Wash the sweet cherries thoroughly, halve them, and carefully remove the pits.
  3. In a bowl, mix the spelt flour, baking powder, and ground vanilla well.
  4. Add the eggs, whole milk, and maple syrup, whisking everything together until a smooth and creamy batter forms.
  5. Pour the batter onto the prepared pan and scatter the pitted cherries evenly on top.
  6. Bake the pancake in the oven for about 15 to 20 minutes until golden brown and beautifully puffed up.
  7. Remove the pan from the oven and let the pancake cool well before serving. Please always do a quick temperature test before your child takes the first bite.

Variations and Tips

  • Swap the fruit: Outside of cherry season, this oven pancake tastes fantastic with fresh blueberries, diced apples, or soft pear pieces.
  • Storage: You can store leftovers covered in the refrigerator for up to two days and briefly reheat them in a pan when needed.
  • Freezing: The pancake freezes very well when cut into handy pieces. Ideally, place a little parchment paper between the portions so they do not stick together.
  • For the whole family: Adults can top their portion with a dusting of powdered sugar, toasted sliced almonds, or a dollop of plain yogurt.
