  • 1 pinch of salt
  • The scraped seeds of half a vanilla bean
  • For coating: 3 tbsp powdered sugar mixed with 1 tsp real vanilla powder

Whenever possible, opt for organic ingredients to ensure a particularly natural flavor.

Preparation

  1. Place the flour, cold butter pieces, ground almonds, powdered sugar, salt, and vanilla seeds into a large bowl.
  2. Quickly knead everything with your hands into a smooth dough until a pliable consistency is reached.
  3. Wrap the dough in a beeswax wrap or plastic wrap and let it rest in the refrigerator for about 60 minutes.
  4. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper.
  5. Form the dough into small rolls, cut them into two-centimeter pieces, and bend them into the typical crescent shapes.
  6. Place the crescents on the baking sheet and bake for 10 to 12 minutes until they turn light yellow.
  7. Carefully toss the still-warm cookies in the powdered sugar and vanilla mixture.
  8. Allow them to cool completely before eating, and always check the temperature before your child takes the first bite.

Variations & Tips

  • Nut Alternative: Instead of almonds, finely ground hazelnuts or walnuts work beautifully for this recipe.
  • Storage: Kept in a tightly sealed tin, the crescents stay fresh for about three to four weeks.
  • Reduce Sugar: For a milder taste, you can simply skip the powdered sugar coating and enjoy the cookies plain.
  • Freezing: The raw dough freezes exceptionally well. Just thaw it overnight in the refrigerator before you plan to bake.
