  • 120 ml plant-based milk (like oat milk, lukewarm)
  • 20 g fresh yeast (or 1 packet active dry yeast)
  • 30 g soft vegan butter or margarine
  • 1 tbsp maple syrup

For the filling:

  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp finely ground hazelnuts or almonds
  • 4 tbsp date syrup or maple syrup
  • 2 tbsp melted vegan butter

Step-by-Step Preparation

  1. Dissolve the yeast in the lukewarm plant-based milk and mix with the maple syrup.
  2. Add the flour and soft vegan butter, kneading everything into a smooth dough.
  3. Cover the dough and let it rest in a warm place for about 60 minutes until it has visibly expanded.
  4. For the filling, mix the cocoa powder, ground nuts, date syrup, and melted butter into a smooth, spreadable cream.
  5. Roll the dough out into a rectangle on a floured surface and spread the chocolate-nut cream evenly over it.
  6. Roll the dough up tightly from the long side and cut the roll in half lengthwise with a sharp knife.
  7. Twist the two strands of dough around each other with the marbled pattern facing up, then place it in a small loaf pan.
  8. Bake the babka in a preheated oven at 180 degrees Celsius (standard bake) for about 25 to 30 minutes.
  9. Let the pastry cool completely and always check the internal temperature before serving it to your child.
