
Vegetarian Chickpea and Carrot Puree
Introduction
Softly cooked chickpeas provide valuable plant-based protein and iron for a meat-free diet. Combined with the natural sweetness of carrots, they create a wonderfully creamy texture. This recipe is wonderful for early experiences with solid foods, offering gentle nourishment and essential nutrients.
Ingredients
- 100 g carrots (peeled)
- 50 g cooked chickpeas (unsalted, rinsed well)
- 1 tsp canola oil (or baby-safe oil)
- approx. 50 ml water
Preparation
- Peel the carrots and cut them into small cubes. Rinse the chickpeas thoroughly under running water and remove their fine skins.
- Steam the diced carrots in a pot with a little water for about 10 minutes until very soft. Add the chickpeas for the last two minutes to warm them through.
- Drain the cooking water and reserve it in a separate container.
- Puree the vegetables together with the oil and a splash of the reserved cooking water until completely smooth and lump-free.
- Allow the puree to cool down well. Always check the temperature on the back of your hand before feeding.
Variations and Tips
- You can easily swap the carrots for sweet potatoes or pumpkin for a different flavor profile.
- The puree can be stored in an airtight container in the fridge for up to two days.
- It freezes beautifully in ice cube trays, making it easy to thaw small portions as needed.
- Parents can enjoy the leftover chickpea and carrot mixture as a delicious spread by adding a pinch of salt, cumin, and a squeeze of lemon juice.
