Preparation
- Preheat the oven to 180 degrees Celsius (convection or fan-assisted).
- Heat the olive oil in a pot and gently sauté the onion and garlic until translucent.
- Add the diced carrots and rinsed red lentils, stirring briefly.
- Pour in the chopped tomatoes and vegetable broth to deglaze the pot.
- Stir in the oregano and basil, then let the sauce simmer gently for about 15 minutes until the lentils are soft and the mixture thickens.
- In a baking dish, alternate layers of the lentil sauce and lasagna noodles, starting and finishing with the sauce.
- Sprinkle the grated cheese evenly over the top layer.
- Bake the lasagna in the preheated oven for about 30 minutes until golden brown.
