
Vegetarian Maultaschen in Clear Vegetable Broth for Pregnancy
Introduction
During the second trimester, many expectant mothers crave savory but light meals. A clear broth with vegetarian Maultaschen (German filled dumplings) warms you from the inside and provides energy without weighing down your stomach. It is a wonderful, comforting meal for any day.
Ingredients
For 2 to 3 portions, you will need:
- 4 cups mild vegetable broth
- 1 package vegetarian Maultaschen or large vegetable ravioli (about 10 ounces)
- 2 carrots
- 1 small leek or 2 green onions
- Half a bunch of fresh parsley
Preparation
- Peel the carrots and cut them into thin slices.
- Wash the leek thoroughly and slice it into thin rings.
- Bring the vegetable broth to a boil in a large pot.
- Add the prepared vegetables to the boiling broth and let them simmer gently for about five minutes.
- Place the vegetarian dumplings into the broth and let them steep over medium heat for another ten minutes until heated through.
- Ladle the soup into bowls and sprinkle with freshly chopped parsley.

You can cut the dumplings into strips before adding them to the broth. This makes them easier to eat with a spoon. The leftover soup is perfect for a quick, warm lunch the next day.
