
Warm Vegetarian Maultaschen in Clear Vegetable Broth
Especially in the third trimester, space in your belly is often limited, which can change your appetite. A clear broth with vegetarian Maultaschen (Swabian ravioli) warms you from the inside and provides energy without feeling too heavy. This simple dish is wonderful to enjoy in small, easily digestible portions.
Ingredients
- 4 cups (approx. 1 liter) vegetable broth
- 1 package vegetarian Maultaschen or large ravioli (about 10 oz or 300 g)
- 2 carrots
- 1 small leek
- A handful of fresh parsley
Instructions
- Wash and trim the carrots and leek thoroughly.
- Chop the vegetables into fine rings or small cubes.
- Bring the vegetable broth to a boil in a medium-sized pot.
- Add the prepared vegetables to the boiling broth and let them simmer gently for about five minutes.
- Add the vegetarian Maultaschen and let everything steep over medium heat for another ten minutes until heated through.
- Sprinkle the freshly chopped parsley on top just before serving.
Good to know
This soup is perfect to store in the fridge for the next day. If you like, you can add some peas or finely diced potatoes to make the meal even more filling and nutritious.
When things feel difficult
If you are experiencing heartburn or feel very full, you can simply leave out the leek. A plain, mild broth with pasta is often especially easy to digest when your stomach is sensitive.
