
Whole Wheat Spaghetti with Creamy Spinach Walnut Sauce
During pregnancy, a warm and simple meal often feels especially comforting. These whole wheat spaghetti with a gentle spinach and walnut sauce satisfy your hunger without feeling too heavy. The combination of nuts and green vegetables provides valuable energy for you and your growing baby.
Ingredients for 2 to 3 portions
- 250 g whole wheat spaghetti
- 200 g fresh baby spinach (washed)
- 50 g walnuts (chopped)
- 100 g cream cheese (made from pasteurized milk)
- 1 small onion
- 1 clove of garlic
- 2 tablespoons olive oil
- Salt, pepper, and a pinch of nutmeg
Preparation
- Cook the whole wheat spaghetti in plenty of salted water according to the package instructions.
- Meanwhile, peel and finely dice the onion and garlic.
- Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
- Add the washed baby spinach and let it wilt over medium heat.
- Stir in the cream cheese until a creamy sauce forms.
- Season the sauce to taste with salt, pepper, and a pinch of nutmeg.
- Mix the drained spaghetti and chopped walnuts into the sauce and serve warm.
Good to know
You can easily prepare the sauce ahead of time and store it in the fridge. If you like, sprinkle some toasted sunflower seeds on top before serving for extra crunch.
When things feel difficult
If you are experiencing heartburn or a sensitive stomach, simply leave out the onion and garlic. A splash of lemon juice makes the dish taste fresher and sometimes helps with mild nausea. Towards the end of pregnancy, when space in your belly gets tight, eating smaller portions throughout the day is often more comfortable.
