Ingredients

  • 400 g potatoes (waxy variety)
  • 300 g parsnips
  • 150 ml whole milk
  • 100 ml low-sodium vegetable broth
  • 50 g grated cheese (mild, such as young Gouda)
  • 1 pinch of nutmeg
  • 1 tsp butter (for greasing the dish)

Preparation

  1. Preheat the oven to 180 degrees Celsius and grease a small baking dish with butter.
  2. Peel and wash the potatoes and parsnips, then cut them into very thin slices.
  3. Layer the vegetable slices alternately in the prepared baking dish.
  4. In a bowl, mix the whole milk with the low-sodium vegetable broth and a pinch of nutmeg.
  5. Pour the liquid evenly over the vegetables, ensuring everything is well covered.
  6. Sprinkle the grated cheese over the top of the gratin.
  7. Bake the gratin in the oven for about 40 minutes, until the vegetables are soft and the cheese is golden brown.
