Winter Salsify and Potato Puree with Veal

Introduction

Salsify is a wonderfully mild and easily digestible winter vegetable for babies. Combined with filling potatoes and tender veal, this puree provides valuable iron for the colder season. Starting solids is an exciting phase where your child gathers many new impressions. Take your time, create a relaxed atmosphere at the dining table, and let your child discover new flavors at their own pace. Seasonal cooking offers wonderful opportunities for warm, nutritious meals, especially in winter. This puree is an inviting way to gently expand the menu and enjoy shared moments during mealtime.

Ingredients

For about two to three portions, you will need the following ingredients:

  • 100g fresh salsify (weighed after peeling)
  • 50g potatoes (waxy varieties work well)
  • 30g lean veal (for example, from the leg)
  • 1 tbsp rapeseed oil (refined or specific baby food oil)
  • 1.5 tbsp mild fruit juice (such as naturally cloudy apple juice) or water

If possible, look for regional organic quality when shopping. This helps ensure that the ingredients are as free of residues as possible.

Preparation

  1. Prepare the vegetables. Peel the salsify under running water, wash it thoroughly, and cut it into small pieces.
  2. Peel the potatoes and cut them into small cubes as well, so they cook evenly.
  3. Rinse the veal under cold water, pat it dry, and cut it into very fine pieces.
  4. Place the vegetables, potatoes, and meat together in a small pot. Add just enough water to barely cover the ingredients.
  5. Bring everything to a boil once. Then reduce the heat and let the mixture simmer gently with the lid closed for about 15 minutes until tender.
  6. Remove the pot from the stove. Blend the mixture with a hand blender until very smooth. If the puree is too thick, add a little of the cooking water, one tablespoon at a time, until it reaches a creamy consistency.
  7. Finally, stir in the fruit juice and the rapeseed oil.
  8. Let the puree cool to a comfortable eating temperature. Always test the temperature on the inside of your wrist before feeding.

Variations and Tips

  • Salsify releases a sticky, milky sap when peeled, which can stain your hands. Wearing disposable gloves or peeling the vegetable directly in a bowl of water is a helpful trick.
  • If fresh salsify is currently unavailable, parsnips or carrots make wonderful alternatives for this recipe.
  • Storage: In a sealed container, the puree keeps in the refrigerator for up to two days.
  • Freezing: This puree freezes beautifully. Use clean ice cube trays to freeze small portions that can be thawed as needed. It stays fresh in the freezer for up to three months.
  • Adjusting texture: For the very first spoons, blend the puree until it is completely smooth. As your child grows and becomes accustomed to solids, you can simply mash the ingredients with a fork.
  • Family meal: Cook a larger batch of salsify and potatoes. For the adults, you can refine the vegetables with a little cream, salt, pepper, and nutmeg to serve as a delicious side dish.

Allergy and Safety Information

  • Always introduce new ingredients individually and in small amounts. The three-day rule helps you calmly observe how your child reacts to a new food.
  • Always ensure that the veal is cooked thoroughly to reliably eliminate any potential bacteria.
  • Avoid adding salt and sugar to baby food entirely during the first year of life.
  • Honey is strictly off-limits for babies under 12 months, as it can contain spores that cause life-threatening infant botulism.
  • Whole or chopped nuts pose a significant choking hazard and may only be used in baby food if very finely ground or as a smooth butter.

Nutritional Information

This dish provides a valuable combination of important nutrients. Veal is an excellent source of easily absorbable iron, which babies increasingly need during this growth phase. The Vitamin C from the fruit juice helps the little body optimally absorb both plant-based and animal-based iron. Furthermore, salsify is rich in fiber, very mild, and gentle on the tummy during early eating attempts. The rapeseed oil supplies essential fatty acids and aids in the absorption of fat-soluble vitamins.
