Winter Salsify Ragout with Mashed Potatoes for Toddlers

The cold season invites us to get cozy at home. Shared meals play an important role in this, as your child develops an increasing joy in discovering new flavors. Salsify is an ideal winter vegetable that becomes wonderfully tender in a mild sauce. Together with fluffy mashed potatoes, this creates a warming comfort meal for the whole family.

This dish provides valuable energy and important nutrients for active toddlers who are full of curiosity and increasingly eating at the family table. It tastes wonderfully mild and has a pleasant, soft texture. This makes eating together at the big table twice as enjoyable.

Ingredients

For about 2 to 3 portions, you will need the following ingredients. If possible, use regional, organic products:

  • 500 g potatoes (floury or baking potatoes)
  • 400 g fresh salsify (or unsweetened from a jar)
  • 1 small onion
  • 1 tbsp canola oil or mild butter
  • 150 ml low-sodium vegetable broth
  • 100 ml whole milk (or an unsweetened oat drink)
  • 2 tbsp plain cream cheese
  • 1 pinch of nutmeg
  • 1 tbsp freshly chopped parsley

Preparation

  1. Peel the potatoes, cut them into cubes, and boil them in a pot of water for about 20 minutes until soft.
  2. Meanwhile, scrub the fresh salsify thoroughly under running water, peel, and cut into bite-sized pieces. A helpful tip: Wear gloves while doing this, as the sap of the roots stains and can be quite sticky.
  3. Finely dice the onion and gently sauté in a pan with the canola oil until translucent.
  4. Add the salsify pieces, sauté briefly, and then deglaze with the low-sodium vegetable broth.
  5. Cover and simmer the vegetables over medium heat for about 15 minutes until the salsify is nicely tender.
  6. Stir the cream cheese and parsley into the ragout, season with a small pinch of nutmeg, and bring to a brief simmer once more.
  7. Drain the water from the potatoes, add the milk, and mash everything with a potato masher into a creamy, smooth consistency.
  8. Serve the ragout together with the mashed potatoes. Let the dish cool down well and always check the temperature before offering it to your child.

Variations and Tips

  • Vary the vegetables: Instead of salsify, parsnips, kohlrabi, or carrots work excellently for this recipe. Diced carrots, for example, bring a gentle, natural sweetness to the dish.
  • Storage: Leftovers can be stored covered in the refrigerator for up to two days. The ragout also freezes beautifully. It is best to prepare the mashed potatoes fresh after thawing, as frozen potatoes often take on a watery texture.
  • Adjusting the texture: For children who are still getting used to chunks, you can lightly puree the finished ragout before serving.
  • For the whole family: Adults can season their portions directly at the table with a bit of salt, colorful pepper, and toasted sunflower seeds for a more robust flavor.

This recipe contains dairy products (whole milk, cream cheese) and celery (often found in vegetable broth), which belong to the 14 major food allergens. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions your child might have.

While honey is permitted after the first birthday, this recipe relies entirely on the natural mildness of the vegetables without any added sweetness. At this age, nuts or seeds are best served finely ground or as a butter to prevent choking hazards.
