Preparation
- Wash and trim the zucchini and carrot, then grate them finely using a box grater.
- Place the grated vegetables in a clean kitchen towel and squeeze out the excess liquid thoroughly.
- In a bowl, mix the vegetables with the egg, oats, flour, herbs, and a tiny pinch of salt until a slightly sticky batter forms.
- Heat the canola oil in a pan over medium heat.
- Spoon one tablespoon of the batter per fritter into the pan, flatten slightly, and fry for about three to four minutes on each side until golden brown.
