
Zucchini and Potato Casserole with Gouda: Comfort Food for Pregnancy
Introduction
This mild zucchini and potato casserole is a wonderful comfort meal during pregnancy. The combination of filling potatoes and light vegetables provides energy without being too heavy on the stomach. Baked with creamy Gouda cheese, it becomes a warm dish that simply feels good.
Ingredients
- 500 g firm potatoes
- 2 medium zucchini
- 150 ml heavy cream (or a plant-based alternative)
- 100 ml vegetable broth
- 100 g grated Gouda cheese (made from pasteurized milk)
- 1 pinch of nutmeg
- Salt and pepper to taste
- A little butter or oil for the baking dish
Preparation
- Preheat the oven to 200 degrees Celsius and lightly grease a baking dish.
- Peel the potatoes and cut them into thin slices.
- Wash the zucchini, trim the ends, and also cut them into thin slices.
- Layer the potato and zucchini slices alternately in the baking dish.
- Whisk the cream and vegetable broth together in a small bowl, season with salt, pepper, and nutmeg, and pour over the vegetables.
- Sprinkle the grated Gouda evenly over the casserole.
- Bake the casserole in the oven for about 40 to 45 minutes until the potatoes are tender and the cheese is golden brown.
Good to know
This casserole is great to prepare a day in advance and keep covered in the fridge. Leftovers also taste fantastic when reheated the next day. You can easily adapt the recipe by adding a few carrot slices if you like.
When things feel difficult
If you are experiencing heartburn or strong nausea, you can replace the cream with a little more mild vegetable broth. Simply leave out spices like pepper or nutmeg if you are currently sensitive to smells. Eating smaller portions throughout the day is often much more comfortable for your stomach.
