Chocolate Lava Cakes for the Whole Family

These small chocolate lava cakes are perfectly suited for little bakers aged three and older. Ingredients

For this recipe, you only need a few high-quality ingredients. When choosing the chocolate, look for a mild variety that is not too bitter. For two to three portions, you will need the following ingredients:

  • 80 g mild dark chocolate, preferably organic
  • 50 g soft butter
  • 2 fresh eggs
  • 20 g fine sugar or coconut sugar
  • 30 g wheat flour or light spelt flour
  • 3 extra pieces of chocolate for the melted core
  • A little extra butter for greasing the ramekins

Preparation

  1. Preheat the oven to 200 degrees Celsius top and bottom heat. Your child can help carefully grease the small ramekins with soft butter.
  2. Break the 80 grams of chocolate into pieces. Slowly melt it together with the butter in a heatproof bowl over a gentle double boiler until a smooth, creamy mixture forms.
  3. In a separate bowl, lightly whisk the eggs and sugar until frothy. Children can wonderfully assist with the stirring here.
  4. Slowly stir the slightly cooled chocolate mixture into the eggs. Then briefly fold in the flour until an even batter without lumps is created.
  5. Fill the finished batter evenly into the prepared ramekins. Then gently press one solid piece of chocolate into the center of the batter in each dish.
  6. Bake the cakes in the preheated oven for about 10 to 12 minutes. The edges will be nice and firm, while the center remains melted due to the chocolate piece.
  7. Remove the cakes from the oven and let them cool down. Carefully check the temperature of the melted core before your child takes a bite, as the filling can get very hot.

Variations and Tips

You can beautifully serve this recipe with fresh fruits. Raspberries, soft pear pieces, or strawberries pair excellently with the sweet chocolate and add a fruity note to the plate.

For a dairy-free version, you can simply replace the butter with mild coconut oil and choose a vegan chocolate.

If you want to prepare the batter in advance, it can be easily stored in the fridge for one day. It is always best to bake the cakes fresh right before eating.

For older children or adults in the family, you can add a pinch of cinnamon or some ground vanilla to the batter to refine the flavor.
