Creamy Cheese Spaetzle with Crispy Onions and a Small Side Salad
Introduction
This hearty vegetarian comfort meal with soft spaetzle and mild Emmental cheese is wonderful for children aged three and up. The combination of warm carbohydrates and a fresh side salad provides plenty of energy for active afternoons. Thanks to the light crunch of the crispy onions, children can playfully explore different textures on their plate.
Ingredients
- 400 g fresh spaetzle (refrigerated section, organic preferred)
- 100 g mild Emmental cheese (grated)
- 50 ml heavy cream or whole milk
- 1 tbsp butter
- 1 pinch nutmeg (freshly grated)
- 1 small onion
- 1 tsp vegetable oil
- 1 small head of butter lettuce
- 2 tbsp mild canola oil
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup
Preparation
- Peel the onion and cut it into fine rings. Heat the vegetable oil in a pan and fry the onion rings over medium heat for about 10 minutes until golden brown, then set aside.
- Wash the lettuce, shake it dry, and tear it into bite-sized pieces. Mix a mild dressing from canola oil, apple cider vinegar, and maple syrup, and pour it over the salad just before serving.
- Melt the butter in a large pan over medium heat. Add the fresh spaetzle and lightly fry them for about 3 to 5 minutes.
- Pour in the cream and refine the spaetzle with a pinch of nutmeg. Sprinkle the grated Emmental evenly over the top.
- Stir everything carefully until the cheese has melted and a smooth, creamy texture forms. Remove the pan from the heat.
- Arrange the cheese spaetzle on plates and sprinkle with the crispy onions. Let the meal cool down well and always check the temperature before eating.
Variations & Tips
- Veggie boost: Mix small peas or finely grated carrots into the spaetzle to integrate an extra portion of vegetables.
- Storage: Leftovers keep in the fridge for about two days in an airtight container. To reheat, simply add a splash of milk so the spaetzle become creamy again.
- For the parents: Adults can season their portion more generously at the table with freshly ground black pepper, a little salt, or fresh chives.
- Adjusting texture: For children who do not like onions, you can simply leave the crispy onions out or serve them separately in a small bowl.
