Crispy Turkey Schnitzel with Baked Potatoes and Cucumber Salad

Introduction

This crispy turkey schnitzel with baked potatoes and mild cucumber salad is a wonderful dish for shared family meals. Ingredients

  • 300 g turkey breast (organic if possible)
  • 500 g waxy potatoes
  • 1 cucumber
  • 3 tbsp canola oil or olive oil
  • 50 g all-purpose flour
  • 1 egg
  • 50 g breadcrumbs
  • 100 g plain yogurt (whole milk)
  • 1 tsp dried dill or fresh parsley
  • A pinch of salt and mild sweet paprika

Preparation

  1. Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit) using the standard bake setting.
  2. Wash and peel the potatoes, then cut them into bite-sized wedges. Toss the wedges with two tablespoons of oil and a little paprika, then spread them evenly on a baking sheet.
  3. Bake the potatoes in the oven for about 25 to 30 minutes until golden brown.
  4. Cut the turkey breast into small, flat cutlets and pound them lightly.
  5. Prepare three shallow bowls: one with flour, one with the beaten egg, and one with the breadcrumbs.
  6. Coat the meat first in the flour, then dip it into the egg, and finally roll it in the breadcrumbs until fully covered.
  7. Heat the remaining oil in a pan and cook the schnitzels over medium heat for about five minutes on each side until golden brown and cooked all the way through.
  8. Peel the cucumber, slice it thinly, and mix it with the yogurt and dill.
  9. Let everything cool slightly before serving and check the temperature to ensure your child does not burn their mouth.

  • Swap the veggies: Instead of regular potatoes, you can easily bake sweet potatoes or carrot sticks in the oven.
  • Storage: You can store leftovers covered in the fridge for up to two days. Breaded schnitzel does not freeze well, as the coating tends to get soggy.
  • Adjusting texture: For children who are still practicing chewing firmer foods, cut the schnitzel into very small, thin strips.
  • Family tip: Parents can easily season their own portion of the cucumber salad at the table with some black pepper, a splash of vinegar, and a bit more salt.
