Preparation
- Preheat the oven to 180 degrees Celsius (conventional heat). Wash the goose breast, pat it dry, and score the skin in a crisscross pattern.
- Place the meat skin-side down in a roasting pan and roast in the oven for about 45 minutes. Turn it over and bake for another 15 minutes until crispy and fully cooked through.
- Meanwhile, peel the potatoes, boil them in lightly salted water until soft, and press them through a potato ricer. Let the mixture cool slightly, then knead it with the starch and a pinch of nutmeg into a smooth dough.
- Shape the dough into small, child-friendly dumplings. Let them simmer gently in hot water for about 10 minutes until they float to the surface.
- For the red cabbage, heat the oil in a pot and sauté the diced onion until translucent. Add the red cabbage, grated apple, and apple juice, then let it simmer over medium heat for about 20 minutes until soft.
- Cut the goose meat into very small, bite-sized pieces. Always check the temperature of all components before serving to prevent your child from burning their mouth.
