Homemade Bread Dumplings with Mild Mushroom Cream Sauce

A comforting classic that transforms day-old bread into a wonderfully soft, delicious meal. The mild and creamy mushroom sauce pairs perfectly with the dumplings, offering a tasty serving of vegetables. This dish is ideal for a cozy family lunch that provides plenty of energy for active play.

Ingredients

For the dumplings:

  • 4 day-old bread rolls (approx. 250 g)
  • 150 ml milk (or plant-based alternative)
  • 2 eggs
  • 1 small onion
  • 1 tbsp butter
  • 2 tbsp fresh parsley (chopped)
  • A pinch of salt and nutmeg

For the sauce:

  • 300 g button mushrooms
  • 1 small onion
  • 1 tbsp butter or canola oil
  • 200 ml heavy cream (or oat cream)
  • 100 ml low-sodium vegetable broth
  • 1 tsp lemon juice
  • A little fresh parsley

Preparation

  1. Cut the bread rolls into fine cubes and place them in a large bowl.
  2. Finely dice the onion and sauté in butter until translucent, then add to the bread along with the parsley.
  3. Gently warm the milk and pour it over the bread, add the eggs and spices, and mix everything thoroughly.
  4. Cover the mixture and let it rest for about 20 minutes until it becomes a moldable dough.
  5. Using wet hands, shape small dumplings and let them simmer in plenty of hot (not boiling) water for 15 minutes.
  6. For the sauce, clean the mushrooms, slice them, and finely dice the onion.
  7. Sauté the onion and mushrooms in butter or oil until lightly browned.
  8. Deglaze with broth and cream, then simmer gently for 10 minutes until the sauce thickens.
  9. Stir in the lemon juice and parsley, drain the dumplings, and serve everything together.
  10. Allow the meal to cool sufficiently and always check the temperature before serving your child.

Variations & Tips

  • Hidden veggies: Grate a little carrot or zucchini very finely and mix it into the dumpling dough.
  • Storage: Leftovers keep well in the fridge for two to three days in an airtight container.
  • Freezing: You can freeze the shaped, uncooked dumplings and drop them directly into hot water when needed.
  • For the parents: Season your portion at the table with some freshly ground black pepper and a pinch of extra salt.
