Hearty Wild Mushroom Pan with Homemade Bread Dumplings

Introduction

This warming autumn dish brings the comforting taste of the forest right to your family table. The soft bread dumplings are wonderfully easy for children to chew, while the creamy mushroom sauce is perfect for dipping. The combination of carbohydrates and fiber provides plenty of energy for active afternoons outdoors.

Ingredients

  • 250 g stale bread rolls (cut into cubes)
  • 150 ml milk (lukewarm)
  • 2 eggs
  • 1 pinch of salt and a little freshly grated nutmeg
  • 300 g mixed wild mushrooms (like chanterelles, porcini, or mild cremini mushrooms)
  • 1 small onion
  • 1 tbsp butter or oil
  • 150 ml vegetable broth
  • 100 ml heavy cream (or oat cream)
  • 1 tbsp fresh parsley (chopped)

Preparation

  1. Place the bread cubes in a large bowl and pour the lukewarm milk over them. Let the mixture soak for about ten minutes.
  2. Add the eggs, a pinch of salt, and nutmeg to the soaked bread. Knead everything with your hands into an even dough and let it rest for another ten minutes.
  3. Using wet hands, form the dough into small, bite-sized dumplings. Bring plenty of water to a boil in a large pot, drop in the dumplings, and let them simmer gently over medium heat for about 15 minutes (the water must no longer boil vigorously).
  4. In the meantime, clean the mushrooms and cut them into small pieces. Finely dice the onion.
  5. Heat the butter or oil in a pan and sauté the diced onion until translucent. Add the mushrooms and fry well for about five minutes.
  6. Deglaze the pan with the vegetable broth and cream. Let the sauce simmer gently for about ten minutes until it thickens slightly.
  7. Refine the finished sauce with the chopped parsley. Let the dish cool down a bit before serving, and always check the temperature before your child takes the first bite.

Variations and Tips

  • Wild mushrooms often have a strong flavor. For children who prefer milder tastes, you can easily use brown button mushrooms instead.
  • Leftover dumplings keep in the fridge for about two days. They are delicious sliced and pan-fried in a little butter until golden brown the next day.
  • You can easily freeze the raw, shaped dumplings. When needed, simply drop them directly from the freezer into hot water and extend the cooking time by a few minutes.
  • Parents can season their own portions at the table with some freshly ground black pepper or an extra pinch of salt to taste.
