Savory Onion Cake with Diced Ham

Introduction

Ingredients

For the dough:

  • 250 g wheat or spelt flour
  • 125 ml lukewarm water
  • 15 g fresh yeast (or half a packet of dry yeast)
  • 2 tbsp canola or olive oil
  • 1 pinch of salt

For the topping:

  • 500 g mild onions
  • 100 g lean diced ham (organic if possible)
  • 150 g sour cream
  • 2 eggs
  • 1 tsp mild paprika powder
  • 1 tbsp canola oil for sautéing

Makes about 2 to 3 generous portions.

Preparation

  1. Dissolve the yeast in lukewarm water and knead it with the flour, oil, and a pinch of salt to form a smooth dough. Cover the dough and let it rest in a warm place for about 45 minutes, until it has visibly doubled in size.
  2. Meanwhile, peel the onions and cut them into fine rings or small cubes. Heat one tablespoon of oil in a pan and sauté the onions over medium heat for about 10 minutes, until they are soft and translucent.
  3. Add the diced ham to the onions and let everything cook briefly. Remove the pan from the heat and allow the mixture to cool down a bit.
  4. Whisk the sour cream with the eggs and paprika powder until you have a smooth cream. Gently fold the cooled onion mixture into the sour cream.
  5. Preheat the oven to 200 degrees Celsius (top and bottom heat). Roll out the yeast dough on a greased baking tray or one lined with parchment paper.
  6. Spread the onion cream evenly over the dough. Bake the onion cake in the preheated oven for about 25 to 30 minutes, until the edges are golden brown.
  7. Let the finished cake cool well before serving. Always check the temperature before your child takes the first bite.

  • Vegetarian option: Simply skip the ham and use finely diced smoked tofu or grated carrots for extra color instead.
  • Storage: The onion cake keeps well in the refrigerator, covered, for about two days. It can also be frozen in portions and easily reheated in the oven when needed.
